Honey & Poppyseed Swiss Roll

Poppyseed is my all time favourite Christmas ingredient. Traditional way of preparing it involves boiling and mincing it few times before adding honey and nuts but with all the cool gadgets currently available on the market, you can process poppyseed quickly and pain-free! 

This beautiful desert is so light, has only 4 tablespoons of sugar and also no dairy or gluten.

For the Sponge:

  • 3 eggs, yolks and whites separated
  • 80g ground almond
  • 70g potato flour
  • 1tsp vanilla extract
  • 4 tbsp caster sugar
  • 1/2 tsp baking powder
  • pinch of salt

Preheat the oven to 180 C, line baking tray ( 16cm x 40cm ) with baking paper.

In a clean dry bowl whisk egg whites with a pinch of salt until white and frothy. Start adding caster sugar, one teaspoon at a time giving 3 minutes between each teaspoon.

When the egg whites are stiff and glossy, start adding egg yokes one by one until smooth and shiny. 

Sieve potato flour and baking powder into a bowl, add ground almond and shake briefly to mix the flours and almond flour ( do not use the spoon  ).

Turn the mixer off and gently fold the flours with a wooden spoon.

Spread the mixture onto a baking paper and bake 8 - 10 minutes.

Take the sponge out of the oven and while hot transfer it upside down onto a dry clean cloth. Roll the sponge in the cloth straight away and leave until it's cold to the touch ( about 40 minutes )

 

For the Honeyed Poppyseed:

  • 200g poppyseed
  • 200ml gluten free oat milk
  • 100ml dark rum
  • 3 tbsp raisins
  • 3 tbsp dried cranberries
  • 3 tbsp chopped prunes
  • 2 tbsp goji berries
  • 3 tbsp chopped dates
  • 1 tsp cinnamon
  • 1/2 tsp ground cloves
  • 2-3 tbsp honey
  • zest of one orange

Soak all the dried fruits ( except for goji berries ) in rum for 1 hour.

Place poppyseed and oat milk in a pot over medium heat and boil for 35 minutes. Add honey stir well till melted in and take off the heat. Drain well in a sieve ( some of the liquid will evaporate and some will get absorbed by poppyseed ) add half of rum soaked fruit and blend in hand blender or mixer, you can also use nutri bullet. Blend really well, the mixture shall turn into a paste. Transfer blended mixture into a bowl, add remaining fruit, spices, orange zest and goji berries and incorporate well. Taste and add more honey if you like. Leave the mixture to cool down.

 

Assembling:

Unroll cold sponge and gently spread a layer of poppyseed by placing few tablespoons of poppyseed mixture all over the sponge and spreading it with spatula or knife. 

With the help of the cloth, roll the sponge back and transfer it onto a serving plate. Sprinkle some icing sugar on the top if you like and serve with a big hot cup of tea :)
