Strawberry Brownie

Strawberry Brownie
  • 200g dark 70% chocolate
  • 180g butter or cacao butter
  • 250 caster sugar
  • 3 eggs
  • 2 tsp baking powder
  • 2tsp vanilla
  • 200g rice flour
  • Handful of fresh strawberries cut in half

24cm x 30cm baking tin, bottom & sides lined with baking paper

Gently melt chocolate and butter. Add vanilla extract. Be careful not to over heat. Cool the mixture down.

Whisk sugar and eggs till they double in size. Gradually start adding the chocolate mixture bit by bit mixing in to the egg and sugar batter.

Add flour and baking powder. Mix well and pour into brownie baking tin. Sprinkle strawberries and bake for about 30 - 40 mins at 180 degrees. Cool down before cutting up.
