Kasha Connolly at the Burren

I’m Kasha: chocolatier, baker, gymnastics enthusiast & accidental entrepreneur. Burren Wild Baker is about daily journeys through a job as a chocolate maker & baker fusing established techniques with new naturally gluten free ingredients in anticipation of new flavours. I aim to celebrate lightness & avoid over-sweetness. Expect some savoury dishes too made with a cacao twist!

As a third generation baker I combine traditional cookery with ingredients such as wide variety of flours like hazelnut, almond, chestnut, buckwheat ( my favourite ), rice flour & acorn in a new exciting way based on texture, look and flavour. In other words I bake with non wheat & gluten free flours because it’s more interesting!

This blog is a testimony to my passion for foods & flavours that feed the body & soul by combining a love for fashion and look with the Burren landscape. Read, experiment, enjoy & share.
